They found reason to believe that goats' milk could help prevent diseases such as anemia and bone demineralization. Goats' milk was found to help with the digestive and metabolic utilization of minerals such as iron, calcium, phosphorus and magnesium. <br />
Research carried out at the Department of Physiology of the University of Granada has revealed that goat milk has more beneficial properties to health than cow milk. Among these properties it helps to prevent ferropenic anaemia (iron deficiency) and bone demineralisation (softening of the bones).<br />
This project, conducted by Doctor Javier Díaz Castro and directed by professors Margarita Sánchez Campos, Mª Inmaculada López Aliaga and Mª José Muñoz Alférez, focuses on the comparison between the nutritional properties of goat milk and cow milk, both with normal calcium content and calcium enriched, against the bioavailability of iron, calcium, phosphorus and magnesium. To carry out this study, the metabolic balance technique has been used both in rats with experimentally induced nutritional ferropenic anaemia and in a control group of rats.<br />

In order to know how the nutritive utilisation of these minerals may affect their metabolic distribution and destination, the UGR researcher has determined the concentration of these minerals in the different organs involved in their homeostatic regulation and different haematological parameters in relation to the metabolism of the minerals.<br />
Better results with goat milk<br />
Results obtained in the study reveal that ferropenic anaemia and bone demineralisation caused by this pathology have a better recovery with goat milk. Due to the higher bioavailability of iron, calcium, phosphorus and magnesium, the restoration of altered haematological parameters and the better levels of parathyroid hormone (PTH), a hormone that regulates the calcium balance in the organism was found in the rats that consumed this food.<br />
Javier Díaz Castro points out that the inclusion of goat milk with normal or double calcium content in the diet “favours digestive and metabolic utilisation of iron, calcium and phosphorus and their deposit in target organs - parts of the organism to which these minerals are preferably sent - involved in their homeostatic regulation.”<br />
According to this researcher, all these conclusions reveal that regular consumption of goat milk – a natural food with highly beneficial nutritional characteristics - “has positive effects on mineral metabolism, recovery from ferropenic anaemia and bone mineralisation in rats. In addition, and unlike observations in cow milk, its calcium enrichment does not interfere in the bioavailability of the minerals studied.”<br />
Although there is no doubt that these findings may be a base for further in depth study of the multiple health benefits of goat milk, the UGR researcher warns that “studies in humans are still required in order to confirm the findings obtained in rats and to promote goat milk consumption both in the general population and in the population affected by nutritional ferropenic anaemia and pathologies related to bone demineralisation.” Part of the results of this research has been published in the International Dairy Journal and Journal Dairy Science.<br />

Health Benefits<br />
Goat's milk is a very good source of calcium and the amino acid tryptophan. It is also a good source of protein, phosphorus, riboflavin (vitamin B2) and potassium. Perhaps the greatest benefit of goat's milk, however, is that some people who cannot tolerate cow's milk are able to drink goat's milk without any problems. It is not clear from scientific research studies exactly why some people can better tolerate goat's milk. Some initial studies suggested that specific proteins known to cause allergic reactions may have been present in cow's milk in significant quantities yet largely absent in goat's milk. The alpha-casein proteins, including alpha s1-casein, and the beta-casein proteins were both considered in this regard. However, more recent studies suggest that the genetic wiring for these casein proteins is highly variable in both cows and goats and that more study is needed to determine the exact role these proteins might play in the tolerability of goat's milk versus cow's milk. Other research has found some anti-inflammatory compounds (short-chain sugar molecules called oligosaccharides) to be present in goat's milk. These oligosaccharides may make goat's milk easier to digest, especially in the case of compromised intestinal function. In animal studies, goat's milk has also been shown to enhance the metabolism of both iron and copper, especially when there are problems with absorption of minerals in the digestive tract. These factors and others are likely to play an important role in the tolerability of goat's milk versus cow's milk. Allergy to cow's milk has been found in many people with conditions such as recurrent ear infections, asthma, eczema, and even rheumatoid arthritis. Replacing cow's milk with goat's milk may help to reduce some of the symptoms of these conditions.<br />
Goat's milk can sometimes even be used as a replacement for cow's milk-based infant formulas for infants who have difficulties with dairy products. Unfortunately, goat's milk is lacking in several nutrients that are necessary for growing infants, so parents interested in trying goat's milk instead of cow's milk-based formula for their infants should ask their pediatricians or other qualified healthcare practitioners for recipes and ways to add these important and vital nutrients. For older children and adults, however, goat's milk can be an excellent calcium-rich alternative to cow's milk as, in addition to calcium, it contains many of the same nutrients found in cow's milk.<br />
Calcium-A Mineral for A Lot More than Strong Bones<br />
Goat's milk is a very good source of calcium. Calcium is widely recognized for its role in maintaining the strength and density of bones. In a process known as bone mineralization, calcium and phosphorus join to form calcium phosphate. Calcium phosphate is a major component of the mineral complex (called hydroxyapatite) that gives structure and strength to bones. A cup of goat's milk supplies 32.6% of the daily value for calcium along with 27.0% of the DV for phosphorus. In comparison, a cup of cow's milk provides 29.7% of the DV for calcium and 23.2% of the DV for phosphorus.<br />

Calcium also plays a role in many other vital physiological activities, including blood clotting, nerve conduction, muscle contraction, regulation of enzyme activity, cell membrane function and blood pressure regulation. Because these activities are essential to life, the body utilizes complex regulatory systems to tightly control the amount of calcium in the blood, so that sufficient calcium is always available. As a result, when dietary intake of calcium is too low to maintain adequate blood levels of calcium, calcium stores are drawn out of the bones to maintain normal blood concentrations.<br />

Dairy Foods Better than Calcium Supplements for Growing Girls' Bones<br />
For young girls going through the rapid growth spurts of puberty, getting calcium from dairy products, such as goat's milk, may be better for building bone than taking a calcium supplement, suggests a study published in the American Journal of Clinical Nutrition.<br />
Finnish researchers enrolled 195 healthy girls aged 10-12 years and divided them into 4 groups. One group was given supplemental calcium (1000 mg) + vitamin D3 (200 IU) each day. The second group received only supplemental calcium (1000 mg/day). The third group ate cheese supplying 1,000 mg of calcium each day, and the fourth group was given a placebo supplement.<br />
At the beginning and end of the study, DEXA (dual-energy X-ray absorptiometry) scans were run to check bone indexes of the hip, spine, and whole body, and the radius and tibia were checked by peripheral quantitative computed tomography.<br />
At the conclusion of the study, girls getting their calcium from cheese had higher whole-body bone mineral density and cortical thickness of the tibia than girls given supplemental calcium + vitamin D, supplemental calcium alone, or placebo. While the researchers noted that differences in the rate at which different children naturally grow might account for some of the differences seen in bone mineral density, they concluded: "Increasing calcium intake by consuming cheese appears to be more beneficial for cortical bone mass accrual than the consumption of tablets containing a similar amount of calcium."<br />

Calcium-rich Dairy Foods Boost the Body's Burning of Fat After a Meal<br />
Those ads linking a daily cup of yogurt to a slimmer silhouette may have a real basis in scientific fact. A study published in the American Journal of Clinical Nutrition not only shows a calcium-rich diet is associated with fat loss but may help explain why.<br />
Normal-weight women ranging in age from 18-30 years were randomly assigned to a low (less than 800 mg per day) or high (1000-1400 mg per day) calcium diet for 1 year, and the rate at which their bodies burned fat after a meal was assessed at the beginning and end of the study.<br />
After 1 year, fat oxidation (burning) was 20 times higher in women eating the high calcium diet compared to those in the low-calcium control group (0.10 vs. 0.06 gram per minute).<br />
The women's blood levels of parathyroid hormone were also checked and were found to correlate with their rate of fat oxidation. (The primary function of parathyroid hormone is to maintain normal levels of calcium in the body. When calcium levels drop too low, parathyroid hormone is secreted to instruct bone cells to release calcium into the bloodstream.)<br />
Higher blood levels of parathyroid hormone were associated with a lower rate of fat oxidation and lower dietary calcium intake, while lower blood levels of parathyroid hormone levels were seen in the women consuming a diet high in calcium, who were burning fat more rapidly after a meal. So, it appears that a high-calcium diet increases fat oxidation, at least in part, by lessening the need for parathyroid hormone secretion, thus keeping blood levels of the hormone low.<br />

Dairy Foods Protective against Metabolic Syndrome<br />
Including goat's milk and other dairy products in your healthy way of eating may reduce your risk of metabolic syndrome by up to 62%, shows the 20-year Caerphilly prospective study involving 2,375 Welsh men ranging in age from 45-59. Researchers have proposed that conjugated linolenic acid (a healthy fat found in greatest amounts in dairy foods from grass fed cows and goats) may improve insulin action and reduce blood glucose levels. Practical Tip: Enjoy a pint of milk and/or a serving of yogurt, cottage cheese or cheese daily. Men who drank a daily pint of milk in the Caerphilly study reduced their risk of metabolic syndrome by 62%. Regular consumption of other dairy products, such as yogurt and cheese, reduced metabolic syndrome risk by 56%.<br />
Dairy Foods' Calcium Protective against Breast Cancer<br />
When French researchers analyzed the dietary intakes of 3,627 women using five 24-hour records completed over the course of 18 months, those with the highest average dairy intake had a 45% lower risk of developing breast cancer than women with the lowest average intake. When only pre-menopausal women were considered, benefits were even greater; those with the highest average dairy intake had a 65% reduction in breast cancer risk.<br />
Analysis indicates the calcium provided by dairy foods is the reason why. Increasing calcium intake was associated with a 50% reduction in breast cancer risk for the whole population, and a 74% reduction for pre-menopausal women. Ann Nutr Metab. 2007;51(2):139-45. Epub 2007 May 29.<br />
Practical Tip: In addition to foods made from goat's or sheep's milk, you can also increase your calcium intake by making sesame seeds; spinach; blackstrap molasses; and collard, turnip or mustard greens, regular additions to your healthy way of eating.<br />
Energy Producing Riboflavin<br />
Goat's milk is a very good source of riboflavin, a B vitamin important for energy production. Riboflavin (vitamin B2) plays at least two important roles in the body's energy production. When active in energy production pathways, riboflavin takes the form of flavin adenine dinucleotide (FAD) or flavin mononucleotide (FMN). In these forms, riboflavin attaches to protein enzymes called flavoproteins that allow oxygen-based energy production to occur. Flavoproteins are found throughout the body, particularly in locations where oxygen-based energy production is constantly needed, such as the heart and other muscles.<br />
Riboflavin's other role in energy production is protective. The oxygen-containing molecules the body uses to produce energy can be highly reactive and can inadvertently cause damage to the mitochondria (the energy production factories in every cell) and even the cells themselves. In the mitochondria, such damage is largely prevented by a small, protein-like molecule called glutathione. Like many "antioxidant" molecules, glutathione must be constantly recycled, and it is vitamin B2 that allows this recycling to take place. (Technically, vitamin B2 is a cofactor for the enzyme glutathione reductase that reduces the oxidized form of glutathione back to its reduced version.) Riboflavin been shown to be able to reduce the frequency of migraine headaches in people who suffer from them.<br />

A Good Source of Protein<br />
Goat's milk is a good source of low-cost high-quality protein, providing 8.7 grams of protein (17.4% of the daily value for protein) in one cup versus cow's milk, which provides 8.1 grams or 16.3% of the DV for protein. The structure of humans and animals is built on protein. We rely on animal and vegetable protein for our supply of amino acids, and then our bodies rearrange the nitrogen to create the pattern of amino acids we require.<br />
Cardiovascular Protection from Potassium<br />
Goat's milk is a good source of potassium, an essential mineral for maintaining normal blood pressure and heart function. Since a cup of goat's milk contains 498.7 mg of potassium and only 121.5 mg of sodium, goat's milk may help to prevent high blood pressure and protect against atherosclerosis.<br />
The effectiveness of potassium-rich foods in lowering blood pressure has been demonstrated by a number of studies. For example, researchers tracked over 40,000 American male health professionals over four years to determine the effects of diet on blood pressure. Men who ate diets higher in potassium-rich foods had a substantially reduced risk of stroke. A cup of goat's milk provides 14.2% of the daily value for potassium.<br />

Most people assume goat's milk will have the same strong musky taste for which goat cheese is famous. Yet, in fact, good quality goat's milk has a delicious slightly sweet, and sometimes also slightly salty, taste.<br />

History<br />
Goats have played a role in food culture since time immemorial with ancient cave paintings showing the hunting of goats. They are also one of the oldest domesticated animals since the herding of goats is thought to have evolved about 10,000 years ago in the mountains of Iran.<br />
Goat milk and the cheese made from it were revered in ancient Egypt with some pharaohs supposedly having these foods placed among the other treasures in their burial chambers. Goat milk was also widely consumed by the ancient Greeks and Romans. Goat milk has remained popular throughout history and still is consumed on a more extensive basis worldwide than cow's milk.<br />
How to Select and Store<br />
When purchasing goat's milk, always use the "sell-by" date as a guide to the shelf life of the goat's milk. Smell the top of the container to make sure that the milk does not smell of spoilage, which could have been caused by being stored for a period of time outside of the refrigerator. Select goat's milk from the coldest part of the refrigerator case, which is usually the lower section.<br />
Goat's milk should always be refrigerated since higher temperatures can cause it to turn sour rather quickly. Always seal or close the milk container when storing it to prevent it from absorbing the aromas of other foods in the refrigerator. Avoid storing goat's milk in the refrigerator door since this exposes it to too much heat each time the refrigerator is opened and closed.<br />

While many raw milk proponents advocate the nutritional benefits of raw milk, pasteurized milk is generally considered safer for drinking, particularly for children, the elderly, and anyone with an immune system impairment. Pasteurizing milk will enable it to keep longer in the refrigerator than raw milk. And, if you're planning on making certain cultured products from the milk, such as soft cheeses, pasteurization is a key component to success. <br />
<a name='more'></a>After all, these products are made from growing bacteria, and if you don't kill the unwanted bacteria first, you'll be growing them, also! Milk pasteurization may sound like a scary process at first. If you're like me, the name conjures up images of pristine lab settings with complicated stainless steel equipment, tubings and mysterious instrument gauges. It turns out, though, that milk pasteurization is not complicated or scary at all. With just a basic set of the right equipment, and a little attention to detail, you can easily learn how to pasteurize milk for yourself. Heating the Milk All you need to begin is a thermometer (one that will clip onto the pot is best), and a pot large enough to hold your milk container. (A stainless steel milk bucket works very well for holding the milk for pasteurizing.) Add water to the large pot, and set your container of strained milk in the water. Clip the thermometer to the milk container so that the end of it is covered by the milk. Note: Be sure the end of the thermometer is not touching the bottom of the pot, or you will get a higher reading than is accurate for the milk. Also, if your thermometer doesn't have a clip, you can easily fashion one from a large paperclip. Heat on high, stirring the milk occasionally, until the thermometer shows the correct temperature. Always stir the milk immediately before checking the temperature, as the process of stirring will bring the warmer milk up from the bottom and usually cause the temperature reading to increase by several degrees almost immediately. Stir constantly, keeping the milk at the proper temperature for the recommended period of time. There are a variety of combinations of temperature and processing time for successfully pasteurizing milk. The most practical combinations for home milk pasteurization are: 161° Farhrenheit for 30 seconds, (some sources use 165° for 15 seconds) or 145° Fahrenheit for 30 minutes The milk must remain at or above the recommended temperature for the entire processing time. If you're planning to drink the milk, the higher temperature/shorter time period combination of milk pasteurization is more convenient. It's much quicker and easier to monitor the milk for thirty seconds than for thirty minutes! However, if you're planning to try Goat Cheese Making with your milk, the lower temperature method is recommended, as it will allow some of the beneficial enzymes and bacteria to survive that will enhance the flavor of the cheese. Cooling the Milk When the milk has processed for the required time, remove it from the water and place in a sink or pan of cold water. In a few minutes, when the water becomes warm, exchange it for cold, and also add ice to the water. Stir the milk often to increase the cooling effect. You can continue like this, exchanging the ice water and stirring the milk until it reaches the proper holding temperature of 40° Fahrenheit. The longer the milk takes to cool, the more off-taste it will have. Milk that is not cooled quickly enough usually has a "nutty" or "vanilla-like" flavor. It can still be used; it is just not as appealing to drink plain. If this happens to your milk, you will need to increase the amount of ice, decrease the time between water changes, and be sure to stir the milk continuously. OR...you can try my "secret" weapon: an electric ice cream freezer. Use the freezer just as if you were making ice cream, layering the ice and rock salt around the outside of the can. Then pour in the milk, close the lid, adjust the motor and turn it on. Monitor the need for additional ice and salt, and check the temperature at 10 minutes, then at 5 minute intervals. This method has always cooled my pasteurized milk to 40° Fahrenheit in less than 20 minutes, which is Grade A standard. It is so much faster than the ice water method, that my first two batches started to freeze before I was aware the milk was already cold! And, the difference in the taste of the milk is extraordinary. Alternatives If you'll be pasteurizing milk on a regular basis, especially daily, you may want to invest in some equipment to help streamline the process. One option is a home milk pasteurizer, such as the SafGard Pres-Vac. This electric pasteurizer performs automatic, pressure-sealed pasteurization of up to two gallons of milk at a time. Then, a hose connects to the faucet for vacuum- sealed cooling of the milk. Home pasteurizers are not inexpensive-- expect to spend over $300 for one. But, they do the job quicker and more precisely than other methods, and require almost no attention during the process. If you expect to be handling goat milk for some time, you may want to make the investment. Another option is to use a Weck canner-pasteurizer. This is the method that I use. The Weck is only slightly less expensive than a home pasteurizer, but it has the advantage of being multi- functional. It is basically a huge, electric stainless steel pot with a lid. You pasteurize milk in the Weck the same way you do with a pot on the stove. Add water to the Weck, turn it on, then set a milk bucket or tote inside. A 2-gallon milk tote will fit easily inside it. Since the lid to the Weck fits right over the tote, the milk heats quickly. You can also use it for canning, or for cooking anything that requires a big pot-- apples for applesauce, boiled peanuts, or soups or stews for large gatherings. If I had to choose only one kitchen appliance to keep, it would be my Weck! Whichever method you choose, a little attention to detail will produce safe, great-tasting, pasteurized milk at home. Proses pencemaran dapat terjadi pada berbagai kesempatan antara lain, saat susu diperah, penyimpanan pada milk-can, transportasi dari kandang ke cooling unit, penanganan ditempat penampungan hingga pengangkutan melalui truk tanki; sampai pada industri pengolah susu kembali dilakukan pengujian. angka kuman yang melebihi batas ambang ditolak, terpaksa susu dibuang ke kali.<br />
Banyaknya kesempatan kuman mencemari susu tersebut perlu dikembangkan teknik sanitasi yang bertujuan untuk mencegah dan menekan pertumbihan mikroba kontaminan air susu. karena awal kontaminasi terjadi pada saat pemerahan.<br />

Kuman dapat dengan cepat berkembangbiak melalui pembelahan sel. berawal dari satu buah sel pada detik berikutnya berkembang menjadi dua sel;detik selanjutnya nmenjadi 4, 8,16 dan seterusnya. dengan rumus 2n,pada detik ke 30 jumlah kuman mencapai diatas 1 milyar tepatnya 1.073.741.824 sel. dalam air susu segarnormal mengandung bakateri maksimal sebanyak satu juta per ml menurut codex. ini merupakan standar penerimaan susu oleh industri pengolah.diatas angka tersebut peternak atau penyetor terkena penalti dengan pengurangan harga, sedangkan dibwah angka itu peternak memperoleh bonus.<br />
Sedangkan menurut sk dirjen peternakan no.17 tahun 1983. dipersaratkan jumlah kuman pada susu murni yang beredar dimasyarakat maksimum sebesar 3 juta; susu tidak boleh mengandung kuman patogen dan benda asing yang dapat mengotori susu. pada susu pasteurisasi maksimal 25.000 per ml, tidak boleh mengandung bakteri coli.<br />
Bakteri asam laktat normal terdapat pada air susu, sesungguhmya bermanfaat dalam pembuatan keju dan mentega. fungsinya memecah gula susu(laktose) dan mengendapkan protein susu (kasein) bakteri tersebut berasal dari lingkungan pemerahan dan kamar penyimpanan susu jenisnya streptococcus lactis dan str. cremorus.<br />
Hindari Kontaminasi<br />
Tindakan sanitasi merupakan upaya higienis pengamanan bahan makan dengan cara mencegah terjadinya kontominasi; menekan pertumbuhan kuman dan membunuh kuman. pertama, mengurangi jumlah awal kuman yakni yang berasal dari sapinya sendiri, pekerja, kandang dan lantainya, peralatan susu serta waktu antara pemerahan dan penetoran ke penampungan.<br />
Saluran susu dari sel alveoler berakhir pada lubang puting yang biasanya terkotori oleh lantai sehingga air susu yang akan keluar akan bertambah jumlah kumannya.untuk menghindarinya, pancaran pertama dari pemerahan hendaknya dibuang. teat dipping atau pencelupanputing dada cairan desinfektan sebelum pemerahan dapat mengurangi secara signifikan angka pertambahan kuman.<br />
Pekerja yang melaksanakan pemerahan harus bebas penyakit menular; tidak boleh memerah pada saat menderita batuk dan mencret; pekerjaan yang lainboleh dilakukan. tangan dan kuku harusbersih dan tidak dierkenankan bersin maupun meludah saat memerah. penggunaan pakaian bersih dan masker sngat melindung terjadinya pencemarandari pekerja.<br />
Sanitasi kandang terutama bagian lantai harus dipelihara. pada saat akan dilakukan pemerahan kandang harus sudah bersih untuk menghilangkan sumber pencemaran kuman. dalam keadaan kotor, angin dan gerakan ekor sapi dapat memudahkan masuknya kotoran pada air susu. ventilasi yang baik menjamin kualitas karena udara yang bersih mencegah timbulnya bau yabg mudah diserap oleh susu.<br />
Peralatan yang dipergunakan untuk air susu harus terbuat dari bahan yang madah dibersihkan, tidak bercelah-celahyang memungkinkan kuman hidup dari sisa air susu yang tertinggal di tempat itu. pembersihan dilakukan dengan menggunakan air bersih, dilanjutkan dengan sabun kemudian dibilas kembalidengan air bersih atau kaporit. peralatan disimpan terbalik pada rak, sebaiknyaterkena sinar matahari. jangandilap dengan kain, karena justru akan terjadi penempelan kuman.<br />
Waktu antara pemerahan dan penyetoran juga merupakan saat kritis air susu terhadap pencemaran kuman. oleh karenanya setelah susu diperah segera kirim ke tempat penampungan. wadah pengiriman biasanya berupa milk-can. jerigen plastik dengan mulut kecil sukar dibersihkan dan mempunyai sifat bau. wadah terisi penuh dan harus tertutup, dihindarkan sinar matahari untuk mencegah kenaikan susu yang berakibat pada percepatan perkembangan bakteri.<br />
Kedua, mencegah pertumbuhan kuman.<br />
mengingat pertumbuhan bakteri yang sangat cepat, jumblah kecil pada awal pemerahan dapat berkembang hingga merusak atau menurunkan kualitas susu. oleh pertumbuhan kuman. salah satu cara yang detail adalah melalui pendinginan.<br />
Susu dalam wadahnya dapat ditempatkan sementara pada suatu bakberlapis seng atau aluminium, diisi dengan timbunan es batu dibubuhi garam dapur dan serbuk gergaji. cara inidapat menurunkan suhu hingga lebih rendah dari 10 derajat celsius. jika penyimpanan agak lama, diperlukan pengadukan secara berkala dengan pengaduk berbahan stainless steel agar suhu merata.<br />
Untuk daerah pegunungan ada cara sederhana yakni dengan mengalirkan airdingin terus menerus pada bak dimana wadah susu ditempatkan. suhu yang diperoleh antara 15 hingga 10 derajat celsius. cara yang lain : surface cooler, refrigerator (lemari es) dan cooling unit.teknik pendinginan semacam ini dilakukan untuk tujuan penyimpanan atau terjadi penundaan pengiriman. pada suhu 12 derajat celcius, susu tahan hingga 12 jam, 8 derajat celcius tahan 12-24 jam; dan pada suhu derajat celcius dapat disimpan hingga 72 jam.<br />
Ketiga, membunuh kuman. pemanasan merupakan teknik yang umum dipergunakan dalam upaya mematikan kuman dalam susu. dengan pemanasan maka air susu dapat disimpan lebih lama,tidak membahayakan kesehatan konsumen. cara ini mengakibatkan perubahan susunan gizi air susu, tetapi kecil artinya jika dibandingkan dengan bahayanya.<br />
Teknik sanitasi yang berpedoman pada prinsip kesehatan masyarakat veteriner (kesmavet) ini memberikan jaminan bahan baku pangan yang aman. setelahbahan baku diolah menjadi produk akhir yang siap disajikan ke konsumen tentu juga perlu memperoleh pengamanan dengan prinsip serupa itu sehingga masyarakat tidakragu-ragu lagi mendapatkan gizi untuk meningkatkan mutu generasi.<br />

Proses pasteurisasi sedikit memperpanjang umur simpan produk pangan dengan cara membunuh semua mikroorganisme patogen (penyebab penyakit) dan sebagian besar mikroorganisme pembusuk, melalui proses pemanasan. Karena tidak semua mikroorganisme pembusuk mati oleh proses pasteurisasi,maka untuk memperpanjang umur simpannya produk yang telah dipasteurisasi biasanya disimpan di refrigerasi (suhu rendah).<br />
<a name='more'></a>Proses pasteurisasi dapat dilakukan dengan beberapa cara, dengan cara tidak kontinyu (batch) dan kontinyu. Pasteurisasi secara batch dilakukan dengan memanaskan bahan pangan pada suhu dan waktu pasteurisasi tertentu, selanjutnya dikemas dalam kemasan steril dengan teknik pengisian hot filling. Sementara pasteurisasi kontinyu dilakukan dengan menggunakan pelat pemindah panas (plate heat exchanger). Proses berlangsung tanpa terputus: bahan yang telah dipasteurisasi langsung dibawa ke tahap pendinginan dan langsung dikemas. Cara kontinyu menggunakan suhu yang lebih tinggi dengan waktu proses yang lebih singkatdibandingkan metode batch. Proses sterilisasi menggunakan kombinasi suhu tinggi dan waktu tertentu untuk membunuh semua mikroorganisme termasuk sporanya didalam bahan pangan, yang dapat tumbuh pada kondisi normal. Proses ini lebih intens dari proses pasteurisasi, menggunakan suhu di atas 1000C dengan waktu yanglebih lama sehingga bisa mempengaruhi penampakan dan rasa produk. Sterilisasi komersial tidak sama dengan sterilisasi absolut. Pada sterilisasi komersial, prosessterilisasi ditujukan untuk membunuh semua mikroorganisme yang hidup padasuhu penyimpanan normal (disuhu ruang). Harus diingat, bahwa beberapa mikroorganisme bisa membentuk spora yang mampu bertahan pada suhu tinggi. Clostridium botulinum menjadi target utama dari proses sterilisasi komersial untuk pangan yang pHnya diatas 6.4, atau awnya diatas 85%. Jika pada sapi perah dikenal keturunan Holstein sebagai penghasil susu utama, di "keluarga" kambing yang terkenal sebagai penghasil susu berkualitas tinggi dengan kandungan lemak rendah adalah jenis Saanen. Jenis Nubian menghasilkan sedikit susu, tetapi berkadar lemak tinggi. Jenis Toggenburg, LaMancha, Oberhasli, dan Alpine termasuk penghasil susu kualitas menengah. Bagaimana rasanya? Susu kambing yang berlemak tinggi tentu jauh lebih nikmat dibandingkan dengan yang berlemak rendah. Namun, konsumsi susu berlemak tinggi berpotensi menyebabkan obesitas. badan, mineralisasi kerangka, kepadatan<br />
tulang, vitamin A plasma darah, kalsium,<br />
tiamin, riboflavin, niasin, dan konsentrasi hemoglobin yang lebih tinggi<br />
dibandingkan dengan kelompok anak<br />
yang diberi susu sapi. Selain itu, susu kambing juga memiliki<br />
kapasitas buffer yang lebih baik<br />
sehingga bermanfaat bagi anak yang<br />
mengalami gangguan pencernaan.<br />
Namun, susu kambing juga memiliki<br />
kelemahan, yakni kandungan asam folat dan vitamin B12-nya lebih rendah<br />
daripada susu sapi. Susu kambing juga mengandung lebih<br />
sedikit orotic acid. Relatif rendahnya<br />
kandungan senyawa tersebut<br />
berpengaruh baik terhadap pencegahan<br />
sindroma perlemakan hati. Hal itu<br />
menyebabkan susu kambing sangat baik untuk menjaga kesehatan hati. Kalsium lebih tinggi Kandungan kalsium pada susu kambing<br />
jauh lebih baik daripada susu sapi atau<br />

90, dan 49 mg. Konsumsi segelas susu kambing dapat<br />
memenuhi 32,6 persen kebutuhan<br />
tubuh akan kalsium dan 27 persen<br />
kebutuhan tubuh akan fosfor setiap<br />
hari. Sebaliknya, segelas susu sapi hanya<br />
memenuhi 29,7 persen kebutuhan tubuh akan kalsium dan 23,2 persen<br />
fosfor setiap hari. Kalsium sangat penting untuk<br />
pertumbuhan tulang. Selain itu, kalsium<br />
juga penting untuk melindungi sel-sel di<br />
kolon (usus besar) agar terhindar dari<br />
kanker. Kalsium juga dapat mengurangi<br />
angka kejadian tulang keropos (osteoporosis), terutama pada ibu-ibu<br />
yang sudah memasuki masa<br />
menopause. Manfaat lain dari kalsium adalah<br />

berbeda dengan susu sapi. Konsumsi<br />
satu gelas susu kambing dan susu sapi<br />
masing-masing dapat memenuhi 17,4<br />
dan 16,3 persen kebutuhan tubuh akan<br />
protein setiap hari. Protein merupakan zat gizi yang sangat dibutuhkan untuk<br />

Sekitar 1-7 persen bayi menderita alergi<br />
terhadap protein yang terdapat dalam susu sapi. Perlu diingat bahwa sekitar 80<br />
persen susu formula bayi yang beredar<br />
di pasaran ternyata menggunakan<br />
bahan dasar susu sapi. Alergi merupakan masalah yang tidak<br />
boleh diremehkan. Reaksi yang<br />
ditimbulkan dapat mengganggu semua<br />
organ tubuh dan perilaku anak sehingga<br />
bisa menghambat pertumbuhan dan<br />
perkembangan anak. Pada tahun pertama kehidupan anak, sistem imun<br />
tubuhnya relatif masih sangat lemah dan<br />
rentan. Gejala alergi terhadap protein susu<br />
biasanya timbul pada bayi yang berumur<br />
dua sampai empat minggu dan<br />
gejalanya akan semakin jelas saat usia<br />
enam bulan. Bagian tubuh yang<br />
terserang alergi adalah saluran pencernaan, saluran pernapasan, dan<br />
kulit. Gejala yang tampak akibat alergi<br />
terhadap protein susu antara lain<br />
muntah, diare, penyerapan zat gizi yang<br />
kurang sempurna, asma, bronkitis,<br />
migrain, dan hipersensitif. Menurut Judarwanto (2000), alergi susu<br />
sapi 80 persen akan menghilang atau<br />
menjadi toleran sebelum anak berusia 3<br />
tahun. Upaya penanganan terhadap<br />
alergi susu sapi adalah menghindari<br />
konsumsi susu sapi dan makanan lain yang mengandung susu sapi. Sebagai<br />
penggantinya, dapat digunakan susu<br />
kedelai atau susu kambing. Sekitar 20-50 persen dari bayi yang<br />
diteliti memperlihatkan gejala tidak<br />
toleran terhadap susu kedelai. Karena<br />
itu, susu kambing lebih<br />
direkomendasikan sebagai pengganti<br />
susu sapi pada bayi yang menderita alergi. Susu kambing dilaporkan telah banyak<br />
digunakan sebagai pengganti ataupun<br />
bahan pembuatan makanan bagi bayi<br />
yang alergi terhadap susu sapi. Alergi<br />
pada saluran pencernaan bayi dilaporkan<br />
berangsur-angsur dapat disembuhkan setelah diberikan susu kambing. Menurut Noor (2002), sekitar 40 persen<br />
pasien yang alergi terhadap protein susu<br />
sapi memiliki toleransi yang baik<br />

benak Ida Rahmawati. Ia ingat<br />
persis, ‘pada umur 6 bulan, Dyah kerap batuk-batuk dari jam 02.00<br />
sampai 04.00,’ ujar Ida. Dokter hanya meresepkan sirop obat<br />
batuk dan antibiotik. Beberapa<br />
bulan berselang, timbul gatal-gatal<br />
pada kulit. Ia pun kembali<br />
memeriksakan Dyah ke dokter.<br />
Hasilnya, Dyah divonis alergi susu sapi. Oleh karena itu Ida<br />
mengganti susu bubuk sapi<br />
dengan susu bubuk kedelai.<br />
Penggantian itu memang<br />
menghilangkan gatal-gatal pada<br />
kulit Dyah. Namun batuk pada malam hari tak kunjung reda. Bahkan setahun kemudian,<br />
batuknya semakin parah. Napas<br />
tersengal-sengal seperti tercekik.<br />
Ida Rahmawati menyambangi<br />
dokter lain untuk mengetahui<br />
penyebab batuk berkepanjangan itu. Saat itulah ia tahu, Dyah<br />
mengidap asma karena alergi susu<br />
sapi. Sejak diagnosis asma itulah,<br />
Dyah yang saat itu berusia 2,5<br />
tahun mengkonsumsi puyer<br />
antialergi 6 kali sehari. Kebiasaan itu berlangsung hingga Dyah<br />

memberikan pertolongan segera,<br />
Ida menyiapkan alat bantu<br />

Buktinya ia sering opname karena<br />
serangan asma. ‘Obat dan nebulizer sudah tidak mampu<br />
menolongnya,’ ujar sang bunda. Hampir setiap 6 bulan Dyah<br />
dirawat di rumahsakit selama 2-3<br />
hari. Asma Dyah kambuh terutama<br />
saat udara panas. Di sekolah yang<br />
dilengkapi pendingin ruangan,<br />
asma Dyah tak pernah kambuh. Namun, begitu pulang karena<br />
udara panas napasnya terengah-<br />
engah. Menurut dr Mohamad Soleh, asma<br />
bisa kambuh salah satunya bila<br />
dipicu stres. Stres bisa secara fisik<br />
maupun psikis. Stres fisik bisa<br />
karena panas, dingin, lelah atau<br />
karena penyakit lain. Asma Dyah kambuh saat udara panas bukan<br />
udara dingin seperti asma pada<br />
umumnya. Menurut dr Imelda<br />
Magaritha asma adalah gangguan<br />
pernapasan karena alergi.<br />
Gangguan itu berupa penyempitan saluran pernapasan yang<br />
menghambat udara keluar dari<br />
paru-paru. Asma dapat kambuh<br />
jika sistem kekebalan terpicu oleh<br />
penyebab alergi. Penyebab alergi<br />
berbeda setiap individu, misalnya alergi susu sapi, udara dingin, debu<br />
atau stres. Ketika upaya penyembuhan secara<br />
medis tak menggembirakan, Ida<br />
mencoba pengobatan tradisional.<br />
Atas saran kerabatnya, ia<br />
memberikan berbagai obat<br />
tradisional seperti hati kelelawar, hati kura-kura, dan hati unta pada<br />
waktu yang berbeda. Dosisnya 50<br />
gram 3 kali sehari. Sayang,<br />
kesembuhan itu belum juga<br />
muncul. ToleransiPada Oktober 2005, seorang rekan menyarankan untuk<br />
mencoba susu kambing. Barharap<br />
kesembuhan pada anaknya, Ida<br />
pun menuruti saran itu. Ia<br />
memesan 10 liter dengan harga<br />
15.000 per liter. Susu kambing dikemas 200 ml, Ida mesti<br />
